1. Honey is better for diabetics than sugar?

Correct.

The glycemic index value of honey is 55; much lower than white sugar's glycemic index value of 68.

2. Does honey provide energy as quickly as glucose?

Yes, it does.

The main sugars in honey are the monosaccharides fructose and glucose. These monosaccharides are quickly converted into carbon dioxide and water, which provides energy.

3. Is "wild raw honey" sold on the side of the road, at home or at night markets better and more pure?

Not necessarily.

The quality of the honey is affected by the hygiene of the harvesting, bottling and storage processes. In addition, the maturity of the honey at the time of harvesting, or the hive where the larvae were harvested can also affect the quality of the honey.

4. Do only certain types of honey have antibacterial properties?

No, it is not true.

All honeys have antibacterial properties because all honeys contain hydrogen peroxide, which kills germs.

*It is important to note that only some honeys contain specific flavonoids such as caffeic acid and ferulic acid that are able to kill germs.

5. Do all honeys have antioxidant properties?

Incorrect.

Honey contains 70-85% sugar; it is an unstable supersaturated solution.

Therefore the glucose in honey will gradually crystallize because the honey is being transformed into a more stable saturated solution.

* When stored at a Celsius temperature of 10-20 degrees (room temperature) will cause more glucose to crystallize.

7. How can I tell if the honey is of good quality?

Good quality honey should meet the following conditions.

• Mature honey with the right amount of moisture
• Free of impurities (excess pollen, insect debris, crystallized glucose)
• Crystal clear color (not cloudy)
• No fermentation
• Fresh floral or fruity aroma
